Doufanghua is like a playful and tender gift which displays a creative attitude closely connected to the land. Returning from the other side of the island, the chef hailing from Miaoli, accidently came across an old style of making tofu, and stepped in the world of tofu. The spread unfolded on the table arose from painstakingly researched ideas that have been around for a long time. The handmade salted tofu is made with a combination of soybeans and black beans. There is also a miso soup with a soybeans base, which is paired with vegetables from Taitung which produce a very special flavor. The entire menu is a refined taste tour. (IGPhoto by @appppp1e325)
